Having been involved with (mostly Mexican) church ministry for the last 20 years both in Mexico and with Hispanics in the States, I don't think I've ever met a single "person of South or Central American descent" who disliked either term. "Hispanic" or "Latino" is fine with most of them.

What they really dislike is if you assume that they are from Mexico, when they are actually from Costa Rica or something.
