I recognised the sheep were bleating in flocks one instantly but only cos it's part of my all time favourite passage of the book.

I think that Adam's is by Fangorn when what remains of the company are looking for the hobbits?

I assume that that's about Gollum and my guess is that it would be Frodo to Faramir.

It was a little sooner after Gollum's (seeming) disappearance, and the speaker wasn't Frodo.

No, you were much closer before. It is in reference to Gollum, but he only disappears for a very short time.
